    Where does our quality Beef come from?

    We source our fresh quality beef from 100% Australian farmers, all ethically, locally produced and sourced. We have fostered long term relationships with our suppliers so they understand our lasting commitment of freshness and highest quality with our customers.

    How we keep our freshness & quality?

    All our meats are blast chilled or frozen and then vacuumed packed at peak quality to maximise freshness. Store all foods at 0°C or lower to retain vitamin content, color, flavour and texture.

    How are our products packaged?

    Proper packaging helps maintain quality and prevent freezer burn. For prolonged storage, freeze unopened vacuum packages as is. If you notice that a package has accidentally been torn or has opened while food is in the freezer, the food is still safe to use, wrap it and keep it frozen.

    How to cook products from The Smokin’ Joint?

    All our products can be grilled, roasted, pan-fried, stir-fried or stewed as per your liking. You can find further information in our web page for each one of our products. Cook all raw beef and roasts to a minimum internal temperature of 62.8 ºC as measured with a food thermometer before removing meat from the heat source. For safety and quality, allow meat to rest for at least three minutes before carving or consuming. Look for this simbols in each of our product for guidlines on best cooking option for each cut.

    When do I need to order for next delivery?

    Smoking takes time!!!  For the best quality and freshest cuts, orders received before Wednesday at 6pm will be processed for Monday / Tuesday delivery.

    How is it delivered?

    Currently we are delivering only to Sydney Eastern Suburbs on Mondays and to the North Shore suburbs on Tuesdays. Our biodegradable specially designed freeze packaging and cooling elements will keep your meat fresh and delicious!!!

    No Problem If you are not home, simply tell us in the comments area where we can leave your box.

    What is the best way to thaw if frozen?

    The best quality and safest ways to thaw food are: in the refrigerator and in cold water. For better results, slow safe thawing in the refrigerator it’s the best option. Smaller items may defrost overnight; large items may take longer, approximately one day for each 2.5-3 kilos of weight.
    For faster thawing, place food in the leak proof vacuum sealed bag and immerse it in cold water. Change water every 30 minutes. After thawing, cook immediately.

     

    Can I re-freeze my meat?

    Meat that has been defrosted in the fridge at lower than  4°C may be refrozen before or after cooking. If thawed by other methods, cook before refreezing.

    What happens with nutrient retention when chilled or frozen?

    The chilling or freezing process itself does not destroy nutrients. In meat and poultry products, there is little change in nutrient value during fridge or freezer storage (as per guidelines).

    How long can I keep my meat fresh and for how long?
    Freezer Storage Chart (0 °C) Note: Freezer storage is for quality only. Frozen foods remain safe indefinitely. When cooked freeze immediately.
